李祥和 雪白生粉
潔白幼細,用於調製各式食品

生粉會吸收水份,吸水後會變成糊狀,好多煮食時步驟都利用這種功能。
醃食身時落生粉,會令材料口感更滑 (如醃肉類)
蒸肉類,如蒸排骨或肉餅時,於醃肉時落生粉,蒸完就唔會因為蒸到出晒水而令肉質變粗嚡 

蒸有汁的食物,埋尾落生粉水打芡,生粉煮熟會變糯 ,令汁水變得較杰身。

食物落鑊煎炸前沾上粟粉,粟粉會係食物表面形成一層粉漿,落鑊後粉漿會變硬,
將食物包住,減少食物水份流失。
